Restaurant: Paper Beijing’s healthy menu-tasting dinner
Beijing, China — After a delicious celebration at Café Sambal, I was invited by the owner’s daughter, Shauna Cho, to taste dishes from the new organic/vegetarian menu. After eating such a healthy set of dishes, I felt like I did myself a favor. Actually, Shauna did me the favor. Here are some dishes we might see in the near future.
When every element of this dish is eaten in one bite, the flavor combination is complete. This dish is a delicious marriage of creamy egg tofu, subtle-freshness of the puréed pumpkin, and savory mushrooms with a kick of horse radish.

Udon noodle coil over horse radish leaf shoots and julienned Shiso leaf, topped with ground chili pepper and nori seaweed. Served with spicy chili oil, self-serve.
Treasures of mushroom and Gingko nut give this creamy-soft last dish, unassuming intrigue. I’m a big fan of Gingko nuts.
Teasers for the appetite! It isn’t impossible to eat healthy or vegetarian in Beijing. As more people turn onto health consciousness and how their food is produced, the options that support these desires are growing. These look great! Never ate at paper, but these look good enough to go and try some entrees. Too bad you don’t have a cocktail blog, because paper’s bartenders Allen is the best!
