Government Issue Health Kits

Shanghai, CHINA — In order to regulate the consumption of cooking oil and salt, thus a healthier society, the residents in Shanghai received kits to facilitate the better eating habits. The bottle measures the amount of oil to be used per week and the spoon limits the salt. My host who taught me Shanghai cuisine this past Friday explained the idea isn’t perfect because some food requires a lot of oil to taste good while some need very little. From what I’ve observed in the two Shanghainese families I’ve visited, salt and oil are used sparingly, but sugar could be reduced. Shanghai cuisine is on the sweeter side.
